Every day calorie intake from food which is considered around 2000 should come from 65 % carbohydrates, 25% fats and 10% proteins. Ghee is becoming expensive day by day and thus the mixing of impurities also has increased. Therefore to control FSSAI has announced few parameters, such as


RM (Reichert Meissl number)

The RM number in cow milk is around 26-29 however goat's milk is little less in number. Buffalo's milk RM number is comparatively high around 32. It is considered that normally ghee RM value should be around 28 minimum. Therefore it is considered that a good quality ghee RM value range is 28 to 32.


FFA (Free fatty acids)

Free fatty acids develop in ghee normally during processing, transporting, manufacturing or while storing. These acids create irritation on tough or mouth as well as smell. If ghee is not pure or fresh these acids quantity increases and therefore as per FSSAI the measurement of FFA should not be more than 1.40. For good quality ghee results, FFA quantity measurement should not be more than 0.55.

BR (Butyro Refractometer) and PV (Polenske Value)

This is the parameter of taste mixing. 40-43 BR value and1.0-2.0 PV value is considered as the parameter of purity of ghee. The increase or decrease in the value defines impurity in ghee or the mixing of vanaspati in ghee.
